Buka stew is the classic Yoruba stew that has been made popular by local Buka (restaurants) joints in western Nigeria. The distinctive characteristic of the stew come from the use of palm oil and open flame cooking. It’s traditionally prepared with numerous parts of cow which are deep fried before being added to the stew. Usually served paired with gbegiri a beans based soup and ewedu a green leafy soup that adds up the special taste and served with Amala.
